HUMMUS (with a twist)
Let this well-presented appetizer start the conversation for you. Hummus 1 Can garbanzo/ chickpeas (you can use white beans like cannelloni as a substitute) 1 lemon juice ½ garlic clove 2 Tbs parmesan cheese 1Cup + Extra virgin olive oil salt pepper paprika Remove 1-2 Tbs of peas from the can and set aside. Pour remaining can, liquid included in a saucepan. Heat. Drain. By heating the peas first, you’ll get a creamier result with your hummus. In a food processor, add ¼ oil, then peas, garlic, lemon juice, cheese, and salt. As you blend, check the consistency. You will keep adding oil to you your desired consistency. Pour in a shallow bowl. Create a swirl pattern starting in the center. Add 2 Tbs oil in the center well, remaining tablespoon(s) of peas. (In the video I said 1/3 C, what in the world?? I apologize).
